⚫ Honey is a miracle food. Besides having a delicious taste, it’s one of the few foods that does not spoil with time, while its in an edible state. Honey, the Miracle Food (a Sugar, a Carbohydrate) that lasts 5000 years, Does not Spoil, Used as a Preservative Thousands of Years Ago.

⚫ Honey has many incredible properties. Honey has been used and investigated for medicinal properties for thousands of years, especially in the treatment of open wounds.

⚫ Herodotus reported in 460 BC that the Babylonians buried their dead in honey for a purpose. Alexander the Great may too have been embalmed in a coffin of honey. Herodotus (Ancient Greek: แผฉฯฯŒฮดฮฟฯ„ฮฟฯ‚) was an ancient Greek historian who was born in Bodrum, Turkey and lived in the fifth century BC (c. 484 to 425 BC). He was called the "The Father of History" Herodotus was of the first historians known to collect materials very systematically, tested for accuracy to an extent, and arrange the materials in a well constructed and descriptive narrative.

⚫ The oldest Honey samples ever found was unearthed in Georgia. These samples date back over 5,000 years. If you found yourself in possession of some 5,000 year-old honey, it may be editable.

⚫ The Chemical Properties of Honey are simple, its basically a form of sugar. You may have heard all sorts of things about the health benefits of substituting honey for sugar, which are likely true.

⚫ Honey is not chemically identical to processed, regular, granulated, white sugar, it is a form of sugar. Sugars are hygroscopic, essentially crystals, that do not contain much water in their natural crystalline-state. Few forms of bacteria and microorganisms can survive in the low-moisture, acidic environment.

⚫ Amina Harris, executive director of the Honey and Pollination Center at the Robert Mondavi Institute at Univeristy of California, Davis says, Honey in its natural form is very low in moisture content. Few bacteria or microorganisms can survive in an low moisture environment, essentially smothered by the honey.

⚫ The fact that organisms can not survive in a honey-environment, means the micro-organisms do not get the chance to "spoil" it. Another characteristic that separates

⚫ Honey apart from other forms of sugar, is Honey’s relatively strong acidity. Honey’s pH is very low, generally between 3.26 and 4.48, (recall a neutral pH is 7.0, a pH below 7.0 is an acidic condition, a pH over 7 is an alkaline condition) which acidity is a very unattractive environment for bacteria and most other micro-organisms.
